I never intended on sharing the recipe for these Raw Vegan Carrot Cake Energy Balls
Since this is something I just whip up for myself as an occasional healthy snack!

Notes for Success & Substitutions:
This is a recipe that doesn’t have to be measured precisely and you can adjust the ingredients to your liking
Add a splash of plant milk if it doesn’t seem to come together
Or a few more tablespoons of any dry ingredient from the list to help bind everything if it is too sticky

A food processor is helpful not only to shred the carrots but to them whiz everything up to get the raisins or dates to a mushy paste which is the make binder for these energy ball
I scooped them into pretty big balls, like 3 Tablespoons each so mine only made about a dozen but typically you would use a 1 Tablespoon scooper for 1 bite balls!
Be sure to use a gluten free oatmeal if you are 100% gluten free
Or you can always use a almond flour if you are able to do nuts or coconut flour instead since this is just for binding and absorbing some of that moisture

Raw Vegan Carrot Cake Energy Balls

Ingredients
- 2 large carrots shredded approx 1¼ cups total
- 2/3 cup of raisins or dates
- 1 + 1/3 cup of organic old fashioned oats
- 2 Tablespoons maple syrup
- 1/4 cup tahini (or nut butter if you can have nuts)
- 1 Tablespoon ground flax meal
- ½ teaspoon tumeric
- 1 teaspoon cinnamon
- ½ teaspoon nutmeg
- ½ teaspoon cardamom
- Fresh grated ginger 1” nubby
- A scoop of vanilla protein powder is optional
- Otherwise just add some almond flour, coconut flour or more oat flour so it’s not super sticky
Instructions
- Combine everything together in a food processor to a sticky but scoopable paste, don't process so much that you can't see the carrots~ you want everything to still be recognizable
- Alternatively you can mix everything by hand, but the raisins or dates much be chopped so fine that it starts to get pasty as this is the main binder in the recipe
- Scoop the mixture and then roll them into perfect balls and then roll them into unsweetened coconut

Keep these Raw Vegan Carrot Cake Energy Balls in the refrigerator at all times and they can be frozen for up to 1 month too!
